Carving out a jack-o'-lantern on Halloween is a really fun and satisfying family activity!
Getting the kids involved is much more than just making something they can tell their friends about at school - it's fun for everyone and gives your child a sense of creative achievement while also providing all important family bonding time.
So if you're planning on carving out a few pumpkins in the coming days, it's a great opportunity to make some delicious nibbles with. One of the best things about pumpkin is not only is it delicious, but it's actually quite versatile and can be used in both sweet and savoury dishes. Not to mention it has a host of health benefits.
Did you know that the humble pumpkin has a good dose of minerals, Vitamins B, C and E, is high in antioxidants and very high in beta-carotene, a carotenoid which your body converts to Vitamin A?
Vitamin A helps to strengthen your immune system, aid good vision, especially night-vision, and also help to grow and repair skin. Pumpkin’s antioxidants (alpha-carotene and beta-carotene amongst others) can help protect your cells against free radical damage. Vitamin A is a fat-soluble vitamin so when eating the nutrient dense pumpkin, it’s important to include some healthy fats for best absorption.
It’s the beta-carotene which gives pumpkin its bright orange colour however it’s not only pumpkin...all foods with a red, orange or yellow colour are loaded with this powerful antioxidant so think carrots, red and yellow peppers, sweet potato, turmeric, apricots and cantaloupe.
